Stone Crab Guide

A little knowledge. An exceptional experience

The Crab & the Harvest

Florida stone crabs have a thick, oval shell and two powerful, black-tipped claws. The larger is the crusher; the smaller is the pincer.

Claws only. Fishers harvest eligible claws and return the living crab to the water. Leaving one claw helps it feed and defend itself. Egg-bearing females keep both claws.

Legal measurement. Each claw must be at least 2⅞ inches (73 mm), measured from the elbow joint to the tip of the fixed finger along the immovable part of the claw.

Renewal. Claws regrow through successive molts. Recovery takes time and depends on age, injury and handling; survival and regrowth are not guaranteed. Regenerated claws show dotted or broken lines inside the palm.

Flavor & Freshness

Firm, tender meat and delicate sweetness make Florida stone crab a coastal delicacy. Natural amino acids, including glycine and alanine, contribute to the sweet character identified in crab flavor research.

Florida habitat. Stone crabs live among seagrass, oyster bars and rocky coastal areas, feeding on small shellfish and crustaceans.

Handled with care. Claws are typically cooked promptly after harvest, then chilled. Careful handling and cold storage preserve their quality and texture.

At your table. Serve cooked claws well chilled with mustard sauce, lemon or drawn butter. Crack only what you plan to serve and refrigerate the rest.

Crack gently. Set the claw on a board or towel. Use a crab cracker, seafood mallet or the back of a heavy spoon to crack it in several places. Remove shell fragments and cartilage carefully.
